Ingredients:
For the Marinade:
500g chicken (cut into pieces)
1 tablespoon yogurt
1 tablespoon lemon juice
1 teaspoon turmeric powder
1 teaspoon red chili powder
Salt to taste
For the Curry:
2 tablespoons vegetable oil or ghee (clarified butter)
1 large onion (finely chopped)
2 tomatoes (pureed)
1 tablespoon ginger-garlic paste
1 green chili (optional, slit)
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon garam masala
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon red chili powder
Salt to taste
1 cup coconut milk (optional, for a creamy texture)
Fresh coriander leaves (for garnish)
Water as needed
Instructions:
Marinate the Chicken:
In a bowl, mix the chicken pieces with yogurt, lemon juice, turmeric, red chili powder, and salt.
Let it marinate for at least 30 minutes (or longer for better flavor).
Cook the Curry:
Heat oil or ghee in a large pan or pot over medium heat.
Add the cumin seeds and let them splutter.
Add the finely chopped onions and sautΓ© until golden brown.
Stir in the ginger-garlic paste and green chili (if using) and cook for another minute.
Add Tomatoes and Spices:
Add the pureed tomatoes to the pan and cook until the oil separates from the masala.
Add the coriander powder, garam masala, cumin, turmeric, red chili powder, and salt.
Cook the spices for 2-3 minutes, stirring frequently.
Cook the Chicken:
Add the marinated chicken to the pan and stir well to coat the chicken with the spice mix.
Cook for about 5-7 minutes until the chicken is browned.
Add Liquid and Simmer:
Add water (about 1 cup or as needed) and bring it to a simmer.
If you prefer a creamy texture, add the coconut milk at this stage.
Let the curry simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
Garnish and Serve:
Garnish with fresh coriander leaves.
Serve hot with rice, naan, or roti.
